Thirty seconds off Khao San Road's electric chaos, Herbs & Spices does something the strip rarely delivers: proper, unapologetic Indian food. Not a tourist approximation. Not toned down for Western palates. The actual thing.

We serve travellers missing home who burst in with relief written all over their faces. We serve expats who've been eating pad thai for three weeks straight. We serve curious food lovers who sit down for chai and don't leave for two hours.

Every curry is cooked to order. Every naan is pulled fresh from the clay tandoor. Every masala chai is brewed the slow way — loose Assam leaf, whole cardamom, real milk, and patience. The kind of patience that makes a difference you taste immediately.

Indian food has a thousand regional dialects. Ours speaks North Indian with a Kashmiri accent — rich, aromatic, built on slow cooking and restraint rather than heat for heat's sake.

We believe a properly made butter chicken should be the most comforting thing you've ever eaten. We believe dal tadka should smell like a grandmother's kitchen. We believe masala chai should take twelve minutes to make, not twelve seconds.

Palak Paneer

Velvet spinach slow-cooked with garlic, ginger and garam masala, cradling pillows of fresh cottage cheese made in-house daily. The dish that has turned meat-eaters into lifelong vegetarians. We've had people order it twice in one sitting.
